//Pablo Mardones
Pablo runs the day-to-day operations at The Crumb Factory. Pablo brings nearly two decades of restaurant management experience as a local area manager for a Fortune 500 fast casual restaurant chain. He specializes in preparing and marketing sustainable, clean food sourcing and preparation techniques. Pablo has always wanted to have his own restaurant and saved money for years to make that dream a reality. "It's always been a passion of mine to do food and work in the restaurant business, and I always wanted to have a restaurant when I was a kid," he said. After growing tired of working corporate hours for someone else, he decided to launch something different to offer St. Petersburg locals a new option with a different kind of culture. The Crumb Factory, an artisanal bakery specializing in breakfasts, lunches, breads, and great coffee, was opened in August 2021. Now Pablo is working on making The Crumb Factory the go-to bakery in St. Petersburg.

//Katie Mardones
Katie is Pablo's wife and business partner. She graduated from Stetson College of Law in 2006 and practices law in addition to helping Pablo with The Crumb Factory. Before opening The Crumb Factory, both Katie and Pablo worked long corporate hours, and their relationship and family suffered. For Katie, The Crumb Factory is more than just a place to get great coffee, breakfast and lunch (though she does enjoy that part: she stops by almost every day on her way to work!). If asked what The Crumb Factory means to her, Katie says it is the expression of her and Pablo's love for each other, their commitment to trying to make their lives more sustainable and loving, and their dream to share that love and commitment with their employees, the customers of The Crumb Factory and the entire St. Pete community
